Spicy Watermelon Margarita #HappyHour

Happy Cinco de Mayo! In celebration of Mexican culture I’m sharing one of my fave cocktails. I like to call it a “Red, White & Green” aka the Spicy Watermelon Margarita. I definitely didn’t create it but I’ve perfected it over the years & I’m sure you’ll love it too!

Ingredients

(Serves 4)

1 Medium Watermelon

1 Small Jalapeño

1 Small Cucumber

2 Limes

Tequila of Choice

Ice

Optional: Tajín, Sugar or Salt

Instructions

Step 1: Chop your Jalapeño and soak it in the Tequila to infuse for at least 15 minutes. The longer it sits the spicier it will be! If you over-do it don’t worry, you can always cut the spice by diluting it with regular tequila.

Step 2: Chop your watermelon and blend with the juice of 1 lime. You can do this in advance and keep the juice on hand. Also, cucumber juice in this recipe is equally delicious and refreshing!

Step 3: Line the rim of your glass with lime and then salt, sugar or Tajín (optional). I love Tajín because the tanginess compliments fresh fruit really well!

Step 4: Fill your glass with ice, the infused tequila and juice! You can also add extra lime or your sweetener of choice if desired.

Step 5: Garnish with lime rounds, cucumber rounds and a tiny slice of watermelon!

This Margarita is the perfect cocktail as we creep into summer! Although our summers may not look the same we can find joy in the little things. Stay safe!
